Seasonal (and affordable) Produce!

The growing season is upon us and that means increased access to fresh, local and delicious produce! Cool weather vegetables are in-season and are great to include in dishes in the month of May and early June. Examples of cool weather vegetables that can be grown locally are radishes, asparagus, sugar snap peas, spinach, rhubarb and swiss chard. In addition to these local vegetables, check the local groceries stores for on-sale fresh fruits and vegetables, thanks to the weather for helping produce grow for us to eat. A few popular ways to add fruits and vegetables to meals include Veggie Pasta Salad, Vegetables Burrito Bowls and Yogurt Bowls. These recipes are ideal for budget-friendly meals because any combination of fruits and vegetables can be used, which means the recipes can be flexible to include any on-sale or donated fruits and vegetables and still be delicious and easy to make.
