Broccoli Turkey Bake (serves 150)

18 ¾ cups uncooked white rice                           18 cups celery, chopped

3 cups unsalted butter                                       19 cups shredded Cheddar cheese

37 cups cooked, chopped turkey                         37 cups Cornflakes cereal

12 pounds frozen broccoli, thawed                      3 ½ cups unsalted butter, melted

18 medium onions, sliced            



Cook rice.

Preheat oven to 350° F.

Sauté sliced onions and chopped celery in 3 cups unsalted butter until tender.

Combine turkey, broccoli, onions, celery, cheese and cooked rice.

Divide into at least 5 pans.

Combine crushed Cornflakes and melted butter.

Top each casserole with Cornflakes mixture.

Bake in oven 30 minutes until golden brown.
